OMG mac n' cheese

Let me start by saying this was one of those things that made me say "wow I made THAT"! I had never made any sauce really, so I was thoroughly impressed with myself. It was so creamy and cheesy... the perfect side dish to my pan fried chicken. Danny loved it as well, we're big mac n cheese fans and this one he said and I quote "as good as any I've ever had". I will definitely be making this again, it was delicious! I adapted the recipe from mommy i'm hungry to serve 4.

Ingredients:

8oz macaroni
4 tbsp butter
1/2 tsp salt
1/4 tsp pepper
1/4 cup flour
1 1/3 cup milk warmed
2 tbsp chicken broth
4oz velveeta cubed
4oz white cheddar cubed
1/4 cup panko
2 tbsp melted butter
1 tbsp parsley

Heat oven to 350, Grease 8x8 glass dish.
Cook pasta for about 2 minutes less than the box calls, drain, set aside.
In a saucepan, melt 4 tbsp butter, salt &
pepper. Once the butter has melted add flour, stir until smooth. Let cook for about 1 minute so it thickens. Add milk and broth, bring to a boil while whisking. Then add cheeses and stir until melted. Pour over cooked pasta and add to greased dish. Combine the panko, parsley and melted butter in a small bowl. Sprinkle macaroni with panko topping, bake uncovered 30 minutes.

Then enjoy the creamiest mac n cheese ever!
